Feta-Orange Dream

Discover a quick and delicious vegetarian recipe: Feta-Orange Dream. A flavourful combination of tangy feta, sweet oranges, and creamy quark, perfect for a light lunch or dinner, translated from Sonja Roost-Weideli's book “Backen mit Olivenöl Zwei”
Ingredients (serves 4):
Dough:
- 200g Rye or whole wheat flour
- 180g Quark, or low fat Greek style yogurt
- 20ml MANI Organic extra virgin olive oil
- 2 pinches of Himalayan salt
- 1tsp Ground pepper
- 1tsp dried oregano leaves
Filling:
- 2 Oranges
- 1tbsp Sugar (or alternative)
- 2 Eggs
- 150ml Double cream
- 2tbsp Parsley, chopped
- 30g MANI Organic extra virgin olive oil
- Black pepper to taste
- 125g Feta
- 40g Parmesan
Instructions:
- Dough: Mix all the ingredients, knead into a dough, divide in half, roll out to fit the form, and place in greased or parchment-lined moulds.
- Filling: Peel the oranges, cut into small cubes, cook with sugar in a pan for 10 minutes, and let cool. In a bowl, whisk together eggs, cream, parsley, olive oil, and pepper. Grate the feta and Parmesan, add them to the mixture, along with the cooled orange pieces, and mix well.
- Assembly: Distribute the filling evenly between the two moulds and smooth the top.
- Baking: Bake at 180°C for 30 minutes.
