The Origins of the MANI Salad

This potato, olive and citrus salad was a favourite among the local farmers and shepherds, who would pack simple food staples like potatoes and olives from home to keep them going through long days of work.

While they were out in the groves, they would often pick fresh oranges right from the trees around them. Combining these juicy oranges with their packed provisions, they created a refreshing and satisfying salad. The MANI Salad, with its mix of earthy potatoes, meaty olives and bright citrus, became a symbol of the region’s natural abundance and the resourcefulness of its people.

  1. Prepare the Potatoes:
    • Boil the potatoes in salted water until tender, about 10-12 minutes. Drain and allow them to cool.
  2. Assemble the Salad:
    • In a large salad bowl, combine the boiled potatoes, orange pieces, sliced red onion, and halved Kalamata olives.
  3. Make the Dressing:
    • In a small bowl, mix together the olive oil, vinegar, oregano, salt, and pepper.
  4. Dress the Salad:
    • Pour the dressing over the salad and toss gently to combine.
  5. Serve:
    • Garnish with additional oregano if desired, and serve at room temperature or chilled.
